The other day, I got home from work super excited! I had this idea of making a vegan shepherd’s pie…only 10 minutes home my house and neighborhood lost electricity. Apparently the firemen turned the power off because we had a really bad rainstorm and it screwed up some of the power lines…so I ate dinner at my in laws, then on Tuesday more then ever I was dying to make it! I haven’t had Sheppard pie since I went vegetarian over 2 years ago….now that I’m vegan I guess I feel the need to challenge recipes and VEGANIZE them . It was a huge success with my husband! My poor husband has been my taste tester on a lot of failed recipes. LettuceLiv for the win! I can gladly say I succeeded it tasted pretty darn delicious.
Vegan Amino’s
I actually posted this recipe on Tuesday on this app I have called Amino’s. I posted it in the Vegan Community app and its just so awesome. If your vegan and need a collaborative community to share your thoughts, recipes and daily struggles! Go and download the Vegan amino app its just a great little place to hang out with other like minded people. I’ve actually been posting a lot of my recipes there. Finally, I will force myself to post regularly here so that the recipes will be readily available to everyone!
The Recipe
I will be making this again and again! For the “meat” I used Gardein’s beefless ground, I sautéed it in onions and black pepper, for the corn I actually used lentils and tri-coloured carrots which was cooked in tumeric ( made it extra yellow) then I Julianne about 2 cups of Swiss chard and I made mashed cauliflower and potatoes with some vegenaise, I layered them out nicely and put it in the oven for 10 minutes.
