Hey everyone! So if you follow me on snapchat you’ll notice I have a surplus of swisschards and all I’ve been doing is finding new recipes to hide them in :joy:. Dinner is served

The other day, I got home from work super excited! I had this idea of making a vegan shepherd’s pie…only 10 minutes home my house and neighborhood lost electricity. Apparently the firemen turned the power off because we had a really bad rainstorm and it screwed up some of the power lines…so I ate dinner at my in laws, then on Tuesday more then ever I was dying to make it! I haven’t had Sheppard pie since I went vegetarian over 2 years ago….now that I’m vegan I guess I feel the need to challenge recipes and VEGANIZE them . It was a huge success with my husband! My poor husband has been my taste tester on a lot of failed recipes. LettuceLiv for the win!  I can gladly say I succeeded it tasted pretty darn delicious.easy vegan sheppard's pie

Vegan Amino’s

I actually posted this recipe on Tuesday on this app I have called Amino’s. I posted it in the Vegan Community app and its just so awesome. If your vegan and need a collaborative community to share your thoughts, recipes and daily struggles! Finally, I will force myself to post regularly here so that the recipes will be readily available to everyone!

The Recipe

I will be making this again and again! For the “meat” I used Gardein’s beefless ground, I sautéed it in onions and black pepper, for the corn I actually used lentils and tri-coloured carrots which was cooked in tumeric ( made it extra yellow) then I Julianne about 2 cups of Swiss chard and I made mashed cauliflower and potatoes with  some vegenaise, I layered them out nicely and put it in the oven for 10 minutes.

Vegan Shepherd’s Pie

  • Prep Time: 30m
  • Cook Time: 30m
  • Total Time: 1h

Ingredients

  • 4 potatoes
  • 1 teaspoon tumeric
  • 2 cups shredded swiss chards
  • 1/4 cup Red lentils
  • 1/2 cup carrots
  • 3 small onions
  • 1 1/2 cups Gardein beefless Ground
  • 2 tablespoons Vegenaise
  • 1 head of cauliflour
  • 1 tablespoon coconut oil

Instructions

  1. preheat oven to 350 (really you don't need to because you just want to grill the mash potatoes) or you can just put the oven on broil once the sheppard's pie is in the oven.
  2. Boil potatoes and cauliflower until soft remove half the excess water and mash add in veganaise until the mash is creamy.
  3. Chopped onions. In a skillet warm and sautée until tender add in beefless ground and season as desired.
  4. Boil lentils and carrots in water and tumeric until tender.
  5. Meanwhile everything is cooking, Julianne chop the Swiss chard and set aside until needed.
  6. To assemble stack layer on layer until you have all the layers on. starting with the beefless ground, the lentils, swiss chards and finally the potato-cauliflower mash. Take a fork and make a line across the potatoes until you cover he entire surface (you will have a pattern in the end) Put in the oven for about 5 minutes( if you have it on broil stand guard and keep checking to make sure you don't burn it.). serve and enjoy 🙂
