VEGAN GUTEN free ‘shortbread’ cookies!

Hello i need to start with apologizing for not posting quick enough! I was just so excited to share a photo of the cookies on instagram but I hadn’t written about them yet ANYWAY all is well now because I have my recipe written down for everyone to enjoy!

what you will need :

1/2 cup of coconut oil (at room temperature)

1/4 cup of sugar (can be substituted for maple syrup, or stevia)

2 tsp vanilla

1 1/4 cups of coconut flour

1/4 cup of water

before starting preheat oven at 350 degrees and line baking sheet with parchment paper

with an electric beater mix the coconut oil until smooth and whipped (not clumpy)  add in sugar and vanilla gradually add in the water and coconut flour alternating between both, then need the dough with your hands, if the dough is too crumbly add a small amount of water, if its too sticky add some extra coconut flour, once the texture, is similar to that of play dough you have to options troll the dough flat and cut out cook cutter shapes or roll the dough into a long tube and cut out the cookies into pieces place the cookies on baking sheet and place in the oven for 12-18 minutes. once done take out to cool.

IMG_2736i made two batches one with a circle cookie cutter and one which i cut out the pieces witha knife the cookie cutter ones I coated it with a simple sugar icing made f 1/2 cup of icing sugar 1 tsp of vanilla extract and one tsp of coconut milk, mix mixture until it is clump free and take the mixture and place a doublet on top of the cookie and coat it well, let it set and dry in a cool place and then enjoy!IMG_2742*don’t forget to show me your final creation, on instagram or tweeter 🙂
