With Christmas quickly approaching I have been mentally preparing my usually script of “yes I get protein.” and “no i don’t eat chicken.” and my personal favorite (because my family is very Italian) “No I will pass on the cheese”. So with my script ready in my mind I realize I need to have some secret weapons under my belt. For when family surround me with there home made desserts… and that look of complete horror when I turn down my grandmother’s homemade meringues. Or my aunts strawberry cheesecake. So I’ve gone to work and have created a few holiday recipes to whip out to impress anyone who has a sweet tooth. The recipe tonight is a very refreshing (because of the peppermint) and festive sugar cookie, and its allergen free! I actually really felt festive today, it could be because of all the snow here in Montreal or that I finally decorated my Christmas tree this weekend. Either way these vegan gluten-free peppermint sugar cookies will bring you to a nice heart warming Christmas movie in your mouth… (ok sorry for that very bizarre image but its the only way I can think of to describe how awesome this cookies are).
You’ll need to have a gluten free flour mix, I used Quinoa flour. I actually found it at Costco, its a surprisingly big bag and it wasn’t all that expensive. I also used Peppermint extract, word of caution less is more… my first batch I used a full teaspoon… and oh man my whole house, my oven, my eyes everything smelled and tasted like tooth paste. so next batch I LITERALLY put a drop of peppermint extract and now all is good in this world. if you can’t find peppermint extract you can actually crush up some candy canes or those little round peppermint candies with the red swirl in them into your dough and kneed it in. A quick tool you can use to cut out the cookies is a simple drinking glass if you don’t have any cookie cutters. Once everything is done and its time to decorate you can also sprinkle on some crushed candy or festive sprinkles.
