Vegan Gluten Free cookiesA while back I made ginger molasses cookies.I got it from my first ever vegan cook book. The book was titled vegan cookies invade your cookie jar! I didn’t however follow the recipe. What I did was changed it to make gluten free. I used a mixture of quinoa flour and something else that I can’t remember. the results were thrilling! I shared the cookies with everyone I knew! But my husband being my designated taste tester was not a fan of these cookies. He said he hated the taste of the molasses…  I just assumed my husband didn’t like molasses at all and so I stopped making them…

I however LOVE molasses cookies. Especially when there super chewy it’s the perfect cookie to have with a cup of coffee. SO, I pined for them for weeks until finally I decided to go back to the drawing board. And decided to take all the stuff I love in a cookie and see if it would work. Because my husband disliked my versions of Isa Chandra’s cookies. I was able to make one that is even be better. And it is gluten-free!

Did you know it’s not actual wheat even though its in the name. I this for you. Buckwheat is not a grass its actually in the family of rhubarb. Buckwheat seeds are cultivated to make into things, like buckwheat flour. The wrote an article all about how buckwheat is the healthiest food you didn’t know about… And its true how many of us have actually heard of buckwheat… Except for at a trendy brunch place when they tell you your pancakes are actual buckwheat and you nod nervously to fit in. Well, buckwheat is high in b vitamins.  High in fiber and is loaded with trace minerals like magnesium and cooper.

I made this recipe fairly simple. when I bake I always like to mix all my dry ingredients and then add in the wet as I go and it seems t work. For the flour, I used both buckwheat flour and quinoa flour, I figured the intense earthiness of the flours will hide behind the molasses. I also added spices, cinnamon nutmeg and all spice the combination is just heavenly! Once I mixed all the ingredients I rolled out teaspoon sized balls and rolled that castor sugar but that’s optional.

Vegan Gluten Free cookies Sugar and spice and everything nice, these yummy molasses cookies are crowd pleasing bites of heaven!

Ingredients

  • 1 cup Quinoa Flour
  • 3 tablespoons almond milk
  • 3 tablespoons molasses
  • 1/4 cup melted coconut oil
  • 1/2 cup sugar
  • 1/2 teaspoon all spice
  • 1/2 teaspoon nutmeg
  • 1 tablespoon cinnamon (or less)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup buckwheat Flour
  • sugar for rolling (this is optional)

Instructions

  1. Preheat oven to 350 degrees
  2. Mix dry ingredients, including the sugar, set aside
  3. Mix the wet ingredients except for the almond milk and slowly incorporate that into your dry ingredients, once everything is incorporated add in the almond milk but only to make sure the dough is doughie and not crumbly add in more almond milk if necessary.
  4. scoop out dough and roll into balls and roll sugar into the balls before placing on baking sheet
  5. bake in the oven for around 10-15 minutes.
  6. Remove from the oven, let it cool for a few minutes because they will be very soft. Then transfer to cooling rack to cool off completely.
  7. Enjoy the yummy molasses cookies

  1. Wow those look delicious! I love that they use quinoa flour as I had been thinking of trying to make it with my vitamix Dry bin. What a good excuse to investigate and try it out with delicious cookies 🍪
