The trees are starting to bloom and the tulips are out! One of my favourite spring vegetables are asparagus! Everywhere you look in farmers markets and grocery stores this veggie is front and centre! But your probably avoiding it because your embarrassed it makes your pee smell… well I have some awesome facts about asparagus to make you look passed that!
Asparagus: Spring Time SuperFood
This spring time veggie is full of amino acids, vitamin e, and folic acid! The amino acids in asparagus can help flush out harmful toxins lingering in urinary track. Meaning our body will less likely get a UTI if you eat asparagus regularly. So if your prone to Urinary track infections you should stock up on these!
Asparagus are also packed with vitamins E. This is a vitamin known to help boost the immune system. It keeps our cells nourished and protected from harmful free radicals. For us to attain the most vitamin E absorption it’s best to cook the asparagus in an oil, preferably avocado oil because this oil is also high in vitamins e and has a high smoke point meaning you are not destroying its nutrient content by cooking at high temperatures.
In just 4 spears you get 22% of your daily amount of folic acid. Why is folic acid important? This vitamin helps create new cells in our bodies. It’s an essential vitamin for pregnant woman to protect the growing fetus from neural tube defect.

What makes this recipe savoury and delicious is that all the ingredients are fresh, nothing is dried or frozen and I find that makes a world of a difference when it comes to making a meal. This recipe is a perfect side dish to anything you make for dinner. I encourage you to make this tonight you won’t regret it!
You’ll need asparagus, fresh thyme, fresh garlic, tamari and avocado oil. I didn’t add any extra salt because the tamari sauce is the perfect amount of salty for this recipe!
