This year for lent I decided to give up coffee. So, luckily my addiction to caffeine didn’t cause too much of a problem for me-quitting cold turkey I did not have any headache withdrawals. I will say I definitely feel tired in the morning! The problem though isn’t what I gave up for lent. My husband decided to give up on all those overly sugary vegan desserts. you know, Oreo, and all the very very bad for you overly processed foods every new vegan discovers is actually vegan! He is not having a good time with any of this. To comfort him I made a Sugarless Vegan Gluten Free Double Chocolate Cake.

Since my husband became vegan this January, after being vegetarian for a full year. He’s let himself indulge in a lot of overly processed sugar filled desserts. We noticed he was addicted to sugar when he’d finish eating his dinner and would complain of feeling  full and did not want seconds. only to come back into the kitchen 20 minutes later looking for something to eat for dessert. I’d always say I was still full and just brush off his dessert cravings as no big deal. Until we accidentally watched an episode of Dr. Oz where he has a quiz asking if your addicted to sugar! This quiz made us both aware of his addiction! And this is why I made the Sugarless Vegan Gluten Free Double Chocolate Cake.

It is pretty crazy at how addictive sugar is! I read an article on a study conducted on rats. These rats were given cocaine and sugar. 94% of these rats choose sugar over cocaine…. (I know its annoying that labs used animals to conduct these studies!) The point I’ m trying to say here is its obvious sugar, especially refined sugars and over processed packaged foods are harming not only our environment but also our health!

To think I gave up caffeine, which we both thought would be a huge issue! My family sends me coffee memes where they keep thinking I’m going to crack under the caffeinless pressure! But so far so good! (for me at least!)

For this recipe, I choose to use dark chocolate or Pure cacao (not cocoa). Did you know that cacao powder is the raw form of the cocoa bean, it has more nutrients and it is not processed.

Maple Syrup

For this recipe I used only a ¼ cup of maple syrup, the reason I used maple syrup is because it is a natural and have added benefits over its counterpart- white sugar and high fructose corn syrup. Just to give you perspective if I cut this cake into 12 slices each piece would contain 4.46 grams of sugar from the maple syrup (which is virtually nothing!)

Further more the added benefits of swapping out your white sugar for pure maple syrup is a obvious choice! Maple syrup have high quantities of Iron, calcium, magnesium and antioxidants that processed sugars don’t have!

This recipe; the Sugarless Vegan Gluten Free Double Chocolate Cake you don’t require any fancy ingredients! I used a one for one gluten free flour mix. I prefer Bob’s red Mill. Maple syrup, water, baking powder, salt, apple cider vinegar, cinnamon, vanilla extract, cacao powder and vegan chocolate chips or you can break up pieces of dark chocolate chocolate bar to give some added oomph to the recipe!

All in all I’ve made this recipe; Sugarless Vegan Gluten Free Double Chocolate Cake a number of times and you can mix it all by hand, it will turn out fine. But If you use electric cake mixer you will notice this batter will be very fluffy and light. So, if you have time make two cakes and see for yourself which way you prefer it!

Ingredients

  • 1 1/2 cups Gluten Free Flour Mix
  • 1 tablespoon Vanilla Exctract
  • 1 tablespoon Apple Cider Vinergar
  • 1/4 cup Maple Syrup
  • 1 cup Water
  • 1/3 cup Liquefied Coconut Oil
  • 1/4 cup Cacao Powder
  • 1 tablespoon Cinnamon
  • 1 teaspoon Salt
  • 1 tablespoon Baking Powder
  • 1/3 cup Vegan Chocolate Chips or Dark Chocolate pieces

Instructions

  1. Preheat Oven to 350 degrees
  2. In a large mixing bowl mix all dry ingredients. Set aside.
  3. In another bowl mix all wet ingredients.
  4. Make a well in dry ingredients and pour in wet, beat constantly until all lumps are dissolved.
  5. Pour into cake pan and bake for 45 minutes.

  7. Omg now this looks bomb. I am always trying to find new, delicious recipes that are also healthy and unique. There’s something to be said about these ingredients vs a chocolate cake from a box. It’s always tastier too!
